Analysis, part 1 - Collar

The undershirt itself was comprised of only a few pieces: front, backs, collar, sleeves, and sleeve cuffs.

Of these, the collar and the sleeve cuffs seemed to undergo the most transformation and variance over the years - mostly in regard to sizing but also collar construction (see our "Exceptions and Oddities, part 7" for more on collar height variation).

For now, we'll say that from about halfway through Deep Space Nine's first season forward, the men's undershirt collar appeared to standardize around 2" in height.

The collars also seem to have been intended to stretch snugly around the wearers' necks.

However, we also know the VOY undershirt collar stretched when tugged:

VOY, 6x11 "Fair Haven"

The elasticity of the VOY undershirt collar, particularly in the second photo, leads us to believe that it was not interfaced (at least not with fusible interfacing), as the fusible knit interfacings we tried severely limited the stretch of the collar.
